I have plenty of vegan recipes on Up Beet Kitchen, so I have decided to gather them up into one easy to access post.
Hi, friends! Hope you had an awesome weekend! What did I get up to? Well, let’s see. It really flew by. Saturday, I went out for a couple of walks, lifted weights, and made a fun family dinner. Today once again flew by. I went out for a nice walk and talk with my mom and spent the rest of the day planning for a personal chef client I’m cooking for this week. I made a creamy pesto pasta with smoky roasted cauliflower for dinner. It was truly wonderful!
As many of you likely already know, Up Beet Kitchen started out as a mainly vegan blog. While I have transitioned to share the full spectrum of recipes, vegan cooking will always hold a special place in my heart. And my vegan recipes are always my most popular ones!
