    These chia pudding and cherry banana soft serve parfaits make the perfect no-cook breakfast. Overnight chia vanilla pudding is layered with creamy cherry banana tahini soft serve in this wholesome, nourishing recipe.

    It’s the middle of the week. I say it’s time for a fun new breakfast recipe to break out of the monotony of your morning meal routine! Honestly, I can’t think of a more appropriate breakfast for hot days than this chia pudding parfait with cherry banana soft serve. To me, it’s reminiscent of cherry cheesecake, and I have a feeling you’re going to love it as much as I do. 🙂

    This chia pudding parfait with layers of cherry banana tahini soft serve is the best thing to wake up to in the summer! Packed with nourishing omega 3 fats, calcium, iron, potassium, B vitamins, and protein, this chia pudding parfait scores some serious nutritional points while tasting like dessert. It’s cold, creamy, and easy to prepare. All you have to do is whip up your chia pudding the night before. In the morning, make some cherry banana soft serve in a food processor. Layer in a bowl or jar, top with some granola and hemp, and you’ve got yourself a beautiful, vibrant breakfast that’s satisfying and energizing.

    ingredients you’ll need

    For the chia pudding, you’ll need yogurt of choice, milk of choice, chia seeds, maple syrup, vanilla, and a pinch of salt. 

    For the cherry banana soft serve, you’ll need frozen bananas, frozen tart cherries, tahini, and a pinch of salt. 

    For serving, you’ll need granola and hemp.

    the method

    The night before, whisk together the yogurt, milk, chia, maple syrup, vanilla, and salt in a bowl. Transfer into a jar, secure the lid, and refrigerate overnight. 

    In the morning, make the cherry banana soft serve: In a food processor fitted with the ‘S’ blade, combine the frozen bananas, cherries, tahini, and salt. Blend until a smooth, soft serve ice cream consistency is reached. Do not over-blend; you still want it to be frozen. 

    To make the parfaits, alternate layers of chia pudding and soft serve in two parfait glasses or jars. Top with granola and hemp. Eat!

    Ingredients

    Chia Pudding

    • ½ cup thick unflavoured/unsweetened yogurt (I used whole milk organic Greek yogurt)
    • 1 ½ cups milk of choice (I used unsweetened almond)
    • 6 tablespoons chia seeds
    • 1 tablespoon maple syrup
    • 1 teaspoon vanilla extract
    • Small pinch of sea salt

    Cherry Banana Tahini Soft Serve

    • 2 large ripe frozen bananas, roughly chopped
    • 1 cup frozen pitted tart cherries
    • 1 tablespoon tahini
    • Small pinch of sea salt

    For Serving

    • Granola
    • Hemp
