    Mint Mango Kale Avocado Smoothie

    This mint mango kale avocado smoothie is creamy thanks to coconut yogurt and avocado, just sweet enough, and refreshing! Enjoy it with breakfast or as a snack for a boost of vitamins, minerals, and healthy fats.

    You might have surmised by now that I’m not much of a green smoothie fan. I genuinely love dark leafy greens at lunch and dinner, but I seem to have taken after my dad in terms of not understanding the allure of blending and drinking them in juice and smoothie form. But I completely understand why so many people do enjoy them! They are a great way to get a hefty dose of vitamins and minerals from those healthy greens without having to chew or really taste them. 

    I was pleasantly surprised by how much I enjoyed this blend that I whipped up on a whim way back over Christmas holidays. It’s a slightly sweet, slightly tart, and very creamy blend of kale, mint, avocado, mango, coconut yogurt, and lime juice. It has hints of mojito flavour, but it’s just a tiny bit more redeeming from a nutritional standpoint. 🙂 Perfect to enjoy before an indulgent weekend, perhaps? Because I don’t know about you, but the weekend is all about indulgence for me.

    Smoothies are rather self-explanatory, aren’t they? For this mint mango avocado kale smoothie, you will need avocado, frozen mango, mint, kale or spinach, coconut yogurt, lime zest and juice, and water. That’s it! Simply throw all of the ingredients into a blender and blend until you have an ultra smooth, creamy smoothie. Enjoy immediately, or store in an airtight jar in the fridge for up to two days. The bright green flavour will dissipate somewhat the longer it sits. However, because there is no banana in this smoothie, it will remain green for longer than smoothies with banana. 

    The recipe makes quite a large smoothie, so you’ll probably get two servings out of it. That is, unless you’re very thirsty, in which case you might find yourself chugging the whole thing! 

    I think this smoothie would go perfectly with a carrot cake oatmeal breakfast bar for a healthy and energizing breakfast. 🙂 That combo is what I plan to enjoy for breakfast tomorrow, in fact.

    Description

    This mint mango kale avocado smoothie is creamy thanks to coconut yogurt and avocado, just sweet enough, and refreshing! Enjoy it with breakfast or as a snack for a boost of vitamins, minerals, and healthy fats.


    Ingredients

    Scale
    • 1 cup cold water
    • ¼ cup coconut yogurt
    • 1 cup frozen diced mango
    • 1 cup chopped kale or spinach
    • 2 tablespoons fresh mint (use more if desired)
    • Zest of ½ a lime
    • 2 tablespoons freshly squeezed lime juice
    • 2 tablespoons avocado (about ¼ of an avocado)
    • Optional: a drizzle of honey or maple syrup if you like a sweeter drink

    Instructions

    1. Place all of the ingredients in an upright blender in the order written and blend until ultra smooth and creamy, like a milkshake.
    2. Pour into one large glass or two small glasses and enjoy immediately, or store in an airtight glass jar in the fridge for up to two days.

     

    Notes

    Feel free to add a couple of tablespoons of hemp hearts or protein powder to increase the protein content of this smoothie!
