    This fresh, tangy, and slightly sweet lemon mint dressing is the perfect summer salad dressing. It’s a great way to use fresh mint from your garden and the perfect alternative to traditional vinaigrettes!

    My mother in law grows mint in her garden every summer, so I am always looking for tasty ways to use it. The other day, I was developing a new salad recipe that I’ll be sharing soon. Instead of the traditional balsamic vinaigrette that I had been planning to make, I opted to whip up a lemon mint dressing in the blender. Today I am sharing that delicious recipe!

    Ingredients You’ll Need

    Here is a detailed list of ingredients you’ll need to make this dressing. Scroll to the recipe card for quantities.

    • Extra-virgin olive oil: A common ingredient in salad dressings. It provides a luxurious base for this salad dressing recipe.
    • Lemon juice: Freshly squeezed lemon juice is a must. I don’t recommend bottled lemon juice as the flavour just isn’t the same.
    • Mint: We’re using ½ cup of fresh mint here. Not a fan of mint or don’t have any on hand? Parsley will work in a pinch!
    • Dijon mustard: Not pictured, but I added a tablespoon of dijon mustard for an added flavour boost.
    • Honey: Necessary to balance out the acidity of the lemon and provides a hint of sweetness.
    • Garlic: A clove of garlic is an essential ingredient in this salad dressing as it adds flavour and freshness.
    • Salt and pepper: Sea salt and freshly ground black pepper enhance the other flavours in the dressing.

    How to Make This Dressing

    1. Step 1: Combine all of the ingredients in an upright blender.
    1. Step 2: Blend until smooth and transfer into an airtight jar or container.

    Variation Ideas

    • Swap out the mint for other fresh herbs like dill, parsley, basil, or cilantro. If using cilantro, use lime juice instead of lemon.
    • Make it a spicy lemon mint dressing by adding one chopped (seeded) jalapeno pepper to the blender.

    How to Serve Mint Dressing

    • Drizzle it over this summery Watermelon Feta Salad in place of the balsamic reduction.
    • Enjoy it with any grain and protein bowl, such as these Halloumi and Chickpea Bowls.
    • Use it as a dip for raw or roasted veggies.

    Kitchen Tools You’ll Need

    • Blender
    • Measuring cups and measuring spoons
    • Glass jar or container

    How To Store

    Store this dressing in an airtight container in the refrigerator for up to three days. The colour will become less vibrant as time goes on. Separation is normal; simply shake to combine.

    Top Tip

    Share something here that you think is key to making this recipe well, such as: Don’t overcook the burgers! Sear the outside and cook to a minimum internal temperature, but they should still be juicy for best results.

    FAQs

    Can I use dried mint?

    No, dried mint will not work the same as fresh mint. If you don’t have mint, use other herbs such as parsley, dill, and basil.

    Can I omit the honey?

    You can, but the dressing is way more tasty with it. The dressing doesn’t turn out sweet; rather, the honey balances the acidity of the lemon.

    What type of mint should I use?

    The most common variety to find in the herb section of the grocery store is spearmint. I don’t recommend peppermint, as the flavour can be too strong and overpowering. If you are using homegrown mint, try to use spearmint.

    Ingredients

    This dressing separates after some time in the refrigerator. Simply shake it to combine again.
