- 1/3 cup extra-virgin olive oil
- 1/3 cup freshly squeezed lemon juice
- 1/2 cup fresh mint
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 large clove of garlic
- 1/2 teaspoon sea salt
- Freshly ground black pepper, to taste
Instructions
- Place all ingredients in a blender. Blend until smooth.
- Pour into an airtight jar or container and enjoy immediately or store in the refrigerator for up to three days.
Notes
This dressing separates after some time in the refrigerator. Simply shake it to combine again.
