    Mediterranean Seven Layer Dip

    This Mediterranean seven layer dip is a fresh and healthy twist on traditional seven layer dip. It has layers of hummus, tzatziki, cherry tomatoes, olives, cucumber and herbs, feta, and red onion. Serve this dip with homemade baked pita chips for the perfect appetizer!

    After the holiday season, you might be craving some fresh, vibrant appetizers to enjoy. Enter this Mediterranean seven layer dip! I used the classic seven layer dip as my inspiration for this freshened-up spin on a favourite.

    I replaced the typical refried beans, sour cream, guacamole, cheese, tomatoes, green onion, and olives with the following:

    • A thick layer of homemade hummus topped with creamy tzatziki, cucumber, red onion, tomato, olives, and feta.

    Instead of the typical tortilla chips for dipping, I serve this dip with baked pita chips. You can bake your own, or use store bought.

    What’s so nice about this dip is that it requires no cooking, with the exception of the pita chips. Thus, it is the perfect dip for all seasons. While I enjoy it in the winter when I am in need of a break from heartier fare, it is also perfect for those outdoor summer gatherings. It is a real crowd pleaser!

    What you’ll need to make Mediterranean Seven Layer Dip

    • For the hummus, you’ll need chickpeas, tahini, extra-virgin olive oil, lemons, sea salt, pepper, cumin, and garlic.
    • For the tzatziki, you’ll need whole milk Greek yogurt, cucumber, dill, lemon, sea salt, pepper, and garlic.
    • For the remaining layers, you’ll need cucumber, red onion, cherry tomatoes, Kalamata olives, and feta.

    How to make Mediterranean Seven Layer Dip

    Now that we’ve covered the ingredients, here is a breakdown of the steps you’ll take to make this incredibly flavourful dip:

    1. Make the hummus: This simple hummus forms the base of your dip. Simply add all ingredients to a food processor and process until very smooth. Spread the hummus over the bottom of a square glass baking dish or similar.
    2. Next, make the tzatziki: You’ll use traditional tzatziki ingredients, including Greek yogurt, cucumber, lemon, garlic, and dill. Simply stir all ingredients together in a bowl. Season with salt and pepper to your taste.
    3. Finally, add your remaining layers: Cucumber, red onion, cherry tomatoes, olives, feta, and more dill, if desired. Serve with pita chips.

    Helpful tips

    • I love a thick layer of hummus, so I made a double batch. If you prefer a thinner layer, feel free to split this recipe in half.
    • I recommend using whole milk Greek yogurt if possible, as it is thick and creamy. You don’t want your tzatziki to become watery. This is also why I recommend squeezing as much liquid as possible out of your cucumber after grating it, before you add it to the yogurt.

    Storage Instructions

    This dip keeps well in the fridge for a couple of days, though it is best when fresh. To store, simply cover the dish with plastic wrap or reusable food wrap such as Abeego or Beeswrap.

    This Mediterranean seven layer dip is a fresh and healthy twist on traditional seven layer dip. It has layers of hummus, tzatziki, cherry tomatoes, olives, cucumber and herbs, feta, and red onion. Serve this dip with homemade baked pita chips for the perfect appetizer!


    Ingredients

    Scale

    For the hummus: 

    • 3 cups cooked chickpeas (or 2 14-oz cans, drained and rinsed)
    • 6 tablespoons tahini
    • 6 tablespoons extra virgin olive oil 
    • Juice of two lemons 
    • 1–2 teaspoons sea salt or Redmond salt (to your taste)
    • 2 teaspoons cumin
    • 2 large garlic cloves, minced

    Layer 2: Tzatziki

    • 1 cup whole milk Greek yogurt
    • ½ of an English cucumber, grated, liquid squeezed out
    • 2 tablespoons fresh dill, chopped
    • Zest and juice of ½ a lemon
    • Sea salt and pepper, to taste
    • 1 garlic clove, minced

    Layer 3:

    • ½ of an English cucumber, diced

    Layer 4:

    • ½ of a small red onion, finely chopped

    Layer 5: 

    • One pint of cherry tomatoes, sliced

    Layer 6: 

    • ½ cup pitted Kalamata olives, sliced

    Layer 7: 

    • 1 cup crumbled feta cheese + additional chopped fresh dill

    Pita Chips: 

    • 3 pitas, each cut into 8 triangles
    • 4 tablespoons extra-virgin olive oil 
    • 1 garlic clove, minced
    • Sea salt and freshly ground black pepper
    • 1 teaspoon dried oregano

    Instructions

    1. Make the hummus: In a food processor fitted with the ‘S’ blade, combine the chickpeas, tahini, olive oil, lemon juice, salt, cumin, and garlic. Process until smooth. Spread over the bottom of an 8×8- or 9×9-inch square dish, or a similar sized round dish. It’s nice to use a glass dish so that everyone can see the layers. 
    2. Next, make the tzatziki. Stir all of the tzatziki ingredients together in a bowl. Spread over the hummus. 
    3. Finally, add the remaining layers in the following order: cucumber, red onion, cherry tomatoes, olives, feta, and a sprinkle of additional dill, if desired.
    4. To make the pita chips: Preheat the oven to 375 F. In a small dish, stir together the oil, garlic, a big pinch of salt and pepper, and oregano. Arrange the pitas in an even layer on a large, rimmed baking sheet. Brush both sides of each pita triangle with the oil mixture. Bake for 12-15 minutes, or until crisp. 
    5. Serve the dip with the pita chips and enjoy!
