    Sweet Potato Blended Baked Oats

    These sweet potato blended baked oats give you an excuse to eat cake for breakfast! Inspired by the viral TikTok baked oats, this recipe for sweet potato blended baked oats combines rolled oats, sweet potato, spices, maple syrup, egg, almond butter, and chocolate chips for the perfect healthy breakfast!

    In an effort to break out of a breakfast rut, I have been making all sorts of fun new breakfasts. In recent days, I have made a chocolate quinoa breakfast bowl, a few different smoothie/chia pudding bowls, and these sweet potato blended baked oats!

    I am not actually on TikTok (I can’t say I’m a big fan of social media in general, to be honest), but I found out about the viral TikTok oats from the blog Eating Bird Food. After making and enjoying Brittany’s original recipe, I’ve been developing some variations on the theme. In the fall, I made Apple Pie Blended Baked Oats, and today, of course, I am sharing a brand new version with sweet potato and spices!

    WHAT ARE BLENDED BAKED OATS?

    Blended baked oats is a type of recipe that uses rolled oats that are blended in a blender, along with a handful of other ingredients, to create a smooth, cake batter texture.

    The mixture is then poured into ramekins and baked. Once baked, this oatmeal recipe takes on a cake-like texture that is quite fluffy and cake-like. It is a far cry from the more dense, chewy baked oatmeal recipes you may have prepared before.

    WHAT DO BLENDED BAKED OATS TASTE LIKE?

    Blended baked oats taste just as you might expect: Sweet, slightly fluffy, and a little gooey in the middle if you under-bake them a bit, as I do. Oats themselves have a rather neutral flavour, but in this recipe, you are blending them with pureed sweet potato, spices, egg, almond butter, maple syrup, and chocolate chips. As you might expect, these blended baked oats taste just like a healthy sweet potato cake or muffin that you can eat with a spoon!

    WHY YOU’LL LOVE THESE BLENDED BAKED OATS

    • Easy to prepare and can be made ahead of time.
    • Healthy, gluten-free (as long as you use certified gluten-free oats), and refined sugar-free.
    • Small batch breakfast that is perfect for two people, or a healthy snack to take with you to work or school that is made with energy-sustaining whole grains.

    INGREDIENTS: WHAT YOU NEED

    The ingredients for these blended baked oats are pantry staple ingredients which you probably have on hand. The only thing you might need to prepare beforehand is sweet potato puree. It’s simple: All you need to do is peel, dice, and steam a sweet potato, let it cool, and blend it in a food processor until it’s smooth. From there, you’re ready to make this recipe with the following ingredients:

    • Milk: Any kind of milk can be used in these blended baked oats. I used cow’s milk, but almond, coconut, soy, goat, or oat milk can all be substituted.
    • Egg: You just need one large egg; I use organic free range eggs!
    • Rolled Oats: Regular old-fashioned rolled oats. While oats are naturally gluten-free, they sometimes come into contact with gluten-containing grains during processing. If you are gluten-intolerant, be sure to use oats that are certified gluten-free.
    • Sweet Potato Puree: You can make your own sweet potato puree by peeling, chopping, and then steaming a sweet potato until tender. Let it cool, then place in a food processor and blend until smooth. For this recipe, you need ½ cup of sweet potato puree; one large sweet potato will provide more than enough.
    • Maple Syrup: My sweetener of choice for this particular recipe. Maple syrup compliments the sweet potato and oats perfectly. However, if you prefer a different sweetener, feel free to use coconut sugar, regular cane sugar, brown sugar, or honey.
    • Spices: All my favourite classic apple pie/pumpkin pie spices are used in this recipe, including cinnamon, ginger, cardamom, nutmeg, and cloves.
    • Baking Powder: Just a small amount of baking powder is all that is required to leaven this small batch oats recipe.
    • Sea Salt: A pinch of sea salt really brings out all the flavours in this recipe.
    • Chocolate Chips: Chocolate chips are optional, but they really make these oats special! I like to mix them into the batter right after blending it up, and then I sprinkle the top with a few more for good measure. I use semisweet chocolate chips.

    HOW TO MAKE BLENDED BAKED OATS

    1. Preheat the oven to 350 F and grease two small (4-oz) ramekins with butter or coconut oil.
    2. Place all ingredients in a blender. Blend until smooth.
    3. Stir in the chocolate chips.
    4. Divide between the two prepared ramekins and top each with a few more chocolate chips.
    5. Bake for 17-20 minutes, depending how gooey your like your baked oats. I baked mine for 17 minutes, as I like a gooey centre.
    6. Enjoy immediately, or allow the baked oats to cool and then store according to the instructions below!

    NOTE: If you prefer to make one large serving of baked oats instead of two smaller servings, pour the batter into a grease 8-oz ramekin and bake for 25-30 minutes.

    STORAGE RECOMMENDATIONS

    Once your blended baked oats have cooled completely, I recommend storing them in an airtight container. Simply place the ramekins directly in the container and cover with a lid. Store them in the fridge for up to four days. You can store them at room temperature overnight, but they stay fresh for much longer in the fridge.

    Blended Baked Oats Q&A

    Are blended baked oats good for you? Yes, they are very healthy as they are made with whole grains and they contain dietary fibre, as well as healthy fat from the almond butter. They are also a good source of protein. For a higher protein meal, pair them with Greek yogurt or a protein smoothie.

    Can you store blended baked oats at room temperature? You can store blended baked oats at room temperature overnight. However, they stay fresh in an airtight container in the refrigerator for 3-4 days.

    Are blended baked oats easy to make? Yes! You simply add all ingredients to a blender, blend until smooth, pour into ramekins, and bake. From start to finish, they take less than 30 minutes to prepare.

    Are blended baked oats gluten-free? Yes, oats are naturally gluten-free. However, oats can come into contact with gluten-containing grains in processing facilities. For this reason, it is a good idea to select certified gluten-free oats if you are celiac.

    Ingredients

    Scale
    • ¼ cup milk
    • 1 large egg
    • ½ cup rolled oats
    • ½ cup sweet potato puree (see notes)
    • 1 tablespoon maple syrup
    • 1 tablespoon almond butter
    • ¼ teaspoon cinnamon
    • ⅛ teaspoon ginger
    • ⅛ teaspoon cardamom
    • ⅛ teaspoon nutmeg
    • Pinch of cloves
    • ¼ teaspoon baking powder
    • Pinch of sea salt
    • 1 tablespoon semisweet chocolate chips, plus more for sprinkling over top

    Instructions

    1. Preheat the oven to 350 F and grease two small (4-oz) ramekins with butter or coconut oil. 
    2. Add the milk, egg, oats, sweet potato, maple syrup, almond butter, spices, baking powder, and salt to a blender. Blend until smooth. 
    3. Stir in the chocolate chips. Divide between the two prepared ramekins. Sprinkle with a few more chocolate chips. 
    4. Bake for 17-20 minutes, depending on how gooey you like the middle. 
    5. Remove from the oven and allow the baked oats to cool for a few minutes before enjoying. Alternatively, cool completely, place the ramekins in an airtight container, and refrigerate for up to four days. 

    Notes

    To make sweet potato puree: Peel and dice a good sized sweet potato. Steam for 15-20 minutes, or until very tender. Let cool for a few minutes, then place in a food processor fitted with the ‘S’ blade and process until smooth. Measure out ½ cup and if there is any left, save it for another use.

      I’m not a fan of almonds, what could I substitute with? Normal butter, oil, or another type of nut butter maybe?
