Hopping on the baked oats train with these apple pie blended baked oats. A handful of healthy ingredients including oats, egg, almond milk, applesauce, peanut butter, maple syrup, and spices are thrown into a blender, blended up until smooth, poured into ramekins, and baked. The perfect healthy fall breakfast or snack recipe, these blended baked oats taste just like cake!
I’m dropping in with a new autumnal breakfast recipe: Apple pie blended baked oats. This style of baked oats is quite popular on social media these days, and for good reason! I’ve made a lot of traditional baked oatmeal recipes, but the difference here is that the oats go into a blender with a few other ingredients so that the batter is smooth instead of highly textured. It bakes up into the most delicious, cake-like concoction. I’ve been enjoying this for breakfast and evening snacks this week.
for these blended baked oats, you’ll need:
- Egg or flax egg
- Almond milk
- Applesauce
- Rolled oats
- Cinnamon, ginger, cardamom, nutmeg, and cloves
- Baking powder
- Sea salt
- Vanilla extract
- Maple syrup
- Peanut butter
- Apple
- Raisins
the instructions
Preheat the oven to 350 F and lightly grease 2 8-oz ramekins or 2 8-oz round glass baking dishes with butter or coconut oil.
Place all ingredients except the chopped apple and raisins in a blender and blend until smooth. (For the lightest and fluffiest baked oats, you’ll want to blend it until it’s extremely smooth.) Stir in the chopped apple and raisins.
Divide between the two ramekins and sprinkle the tops with a few more raisins, if desired.
Bake for 15-20 minutes (I baked mine for 20 minutes), or until a toothpick inserted into the centre of one of the cakes comes out clean.
Let sit until cool enough to handle and then enjoy warm, topped with more nut butter, yogurt, apple, walnuts, etc.
Enjoy!
storage instructions
If not eating all at once, cover and store at room temperature for one day or in the refrigerator for up to three days.
