Hope your week has been great! I don’t know if I’ve said this before, but I try to take a couple nights off from creating recipes each week and try someone else’s, instead. It’s a nice mental break, and it’s fun to explore other blogs and recipe books. I am a big fan of Half Baked Harvest, and last night, we made this crispy roasted blackened cauliflower with burrata and herbs, as well as this roasted corn jalapeño hummus with pita. Both were so good! I had never tried burrata before, and it is a new favourite, that’s for sure. Today’s highlight will be meeting up with my best girlfriends, who I haven’t seen since December! I have missed them dearly and cannot wait to catch up in person.
Okay, enough about me. I am so excited about today’s recipe. Neapolitan overnight oats for the win! This is one of my all-time favourite overnight oats recipes. Layers of vanilla and chocolate overnight oats are topped with delightfully sweet, creamy, and healthy strawberry banana soft serve. You can make them vegan by swapping out dairy yogurt with your favourite plant-based yogurt, so regardless of your dietary persuasion, you can eat these overnight oats.
Neapolitan overnight oats: the details
Like all overnight oats recipes, you’ll whip up the vanilla and chocolate oats the night before. They soften and thicken as they sit in the fridge overnight, so there’s no need to cook them in the morning. The strawberry banana soft serve can also be made the night before, though I prefer the texture when it’s made fresh.

For the vanilla overnight oats, you’ll need yogurt, milk (dairy or non-dairy), rolled oats, chia, vanilla, and salt. You can also add a tablespoon of maple syrup to the vanilla layer, but I opted to use maple syrup in the chocolate layer only.
For the chocolate overnight oats, you’ll need yogurt, milk, rolled oats, chia, cocoa, maple syrup, and salt.
For the strawberry banana soft serve, you’ll need frozen bananas, frozen strawberries, and tahini.
the method
Make the vanilla overnight oats: In a jar or container, stir together the yogurt, milk, oats, chia, vanilla, and a tiny pinch of salt. The salt is optional, but I do find that it helps bring out the flavour of everything else. Secure the lid and refrigerate overnight.
Make the chocolate overnight oats: In a jar or container, stir together the yogurt, milk, oats, chia, cocoa, maple syrup, and a tiny pinch of salt. Secure the lid and refrigerate overnight.
In the morning, make the soft serve: Add the bananas, strawberries, and tahini to a food processor fitted with the ‘S’ blade. Process until a smooth, creamy soft serve consistency is reached. This will take a couple of minutes. Scrape down the sides with a spatula, as needed. If desired, place in the freezer for a few minutes to firm up.
Serve: Layer the vanilla and chocolate overnight oats in two jars or parfait glasses. (I love Weck brand 10-oz jars for this.) Top with the strawberry banana soft serve. Eat!

- ⅓ cup large flake rolled oats
- 1 ½ tablespoons chia seeds
- ½ teaspoon vanilla extract
- Tiny pinch of sea salt
Chocolate Overnight Oats
- ½ cup yogurt of choice
- ½ cup milk of choice
- ⅓ cup large flake rolled oats
- 1 ½ tablespoons chia seeds
- 1 tablespoon cocoa
- 1 tablespoon maple syrup, or more to taste
- Tiny pinch of sea salt
Strawberry Banana Soft Serve
- 2 large ripe frozen bananas, roughly chopped
- 1 cup frozen strawberries, sliced in half
- 1–2 tablespoons tahini
