    Peanut Butter Mocha Smoothie

    This peanut butter mocha smoothie is luxurious and energizing. Make this as an afternoon pick-me-up the next time you need a boost!

    For the first time in Up Beet Kitchen’s history, I have lost a recipe before posting it. Yesterday, I had the photos for some oat flour chocolate zucchini muffins all edited and ready to go. I started writing the post. But when I flipped through the notebook where I write down all of my recipes, the zucchini muffin recipe was nowhere to be found. I haven’t the faintest idea where it could have gone. I am so mad at myself! I’m sure it will turn up eventually… but with my luck, I’ll find it in say, November, long after zucchini season is over. 

    Alas, in lieu of a chocolate zucchini muffin recipe, you get a peanut butter mocha smoothie! Not quite the same, but still an energizing, refreshing afternoon pick-me-up! I’ve said before that I’m not much for green smoothies, but I love blending frozen banana, dates, coffee, and nut butter into a homemade Frappuccino type of drink. It’s a great way to satisfy your sweet tooth while also getting in some quality nutrients, like fibre, potassium, magnesium, and healthy fat. 

    This particular smoothie recipe is a blend of almond milk, frozen banana, date, cocoa, cold brew (or cold coffee), and peanut butter. I like it as an afternoon snack, but if you want to enjoy it for breakfast, you can–it would be a good idea to add a scoop of protein powder or a few spoonfuls of hemp, though, to increase the protein content! I also like serving a little dish of granola alongside for some crunch. Below is a dish of chai granola- I’ll be sharing the recipe soon!

    Description

    A healthy, energizing smoothie recipe with peanut butter, cocoa, and coffee!


    Ingredients

    Scale
    • ½ cup unsweetened almond milk (or non-dairy milk of choice)
    • ½ cup cold brew coffee*
    • 1 large frozen banana, chopped
    • 1 soft pitted Medjool date
    • 1 tbsp cocoa powder
    • 1 ½ tbsp natural peanut butter
    • Pinch of fine sea salt
    • Optional: 1 scoop of protein powder or 2-3 tablespoon hemp hearts

    Instructions

    1. Place all ingredients in a blender and blend until smooth.

    Notes

    *Instead of true cold brew, I usually just brew some coffee in my French press, transfer it into a jar, and refrigerate it for use in my smoothies.

    This smoothie doesn’t call for any ice cubes, but feel free to add one or two if you like.

    If your dates aren’t super soft, soak one in warm water for a few minutes to soften.
