    With September almost upon us, it’s back to school for some, and back to work for others. How prepared are you from a nutritional standpoint? If you haven’t yet taken the time to sit down and plan some healthy breakfasts, lunches, dinners, and snacks, perhaps you will feel inspired to carve out some time on your long weekend to do so. Get your significant other and/or kids involved and find a bunch of recipes that sound delicious and fun to make together. Putting healthy habits into action in the first month sets the tone for months to come. 🙂

    Speaking from personal experience, I always feel so much more at ease and organized in other areas of my life when I’m taking the time to prepare nourishing meals and snacks. I know I’m going to come off as preachy here, but I’m going to say it anyway. Yes, we all live in the real world, and people tend to lead busy lives these days. But being healthy takes time and commitment, and in my experience, there is always at least an hour of spare time most days to meal and snack prep. Further, at the heart of it is the fact that cooking for ourselves and our loved ones is an act of love and self care–one that should never be overlooked.

    Of course, there will be days when you just don’t have the time or energy to be in the kitchen, and that’s why prepping some healthy meal components and snacks beforehand comes in handy.

    These cashew chocolate cookie dough energy balls are the perfect snack to prep and keep in the fridge or freezer. They travel well, and are loved by kids and adults alike.

    They are made with cashews, Medjool dates, oat flour, cashew butter, maple syrup, sea salt, vanilla, cacao nibs, and optional maca.

    Packed with fibre, healthy fat, magnesium, and readily available carbohydrates, you’ll notice an almost immediate energy boost from these little bites.

    I love to throw a couple into a tiny stainless steel container or glass jar when I’m out and about. They’re particularly excellent on hikes, as a pre- or post-workout snack, or as an afternoon pick-me-up, with or without coffee. 😉 They’ve also been known to soothe hangry children and adults alike.

    Truth be told, my favourite way to enjoy these scrumptious little treats is crumbling them over vanilla coconut ice cream for dessert (surprise!). However you serve them, these cookie dough energy balls are everything you could ask for in a snack.

    Description

    These cashew chocolate cookie dough energy balls are an essential addition to your healthy snack rotation. You’ll need just eight everyday ingredients including cashews, dates, oat flour, nut butter, and maple syrup to make these energizing bites.


    Ingredients

    Scale
    • 1 cup raw cashews
    • 1 cup pitted Medjool dates (about 12 pitted; if your dates are not soft, soak them in warm water for ten minutes, then drain and continue)
    • ½ cup oat flour (or ½ cup rolled oats ground into a flour)
    • 2 tbsp cashew butter
    • 1 tbsp pure maple syrup
    • ¼ tsp fine sea salt
    • ½ tsp pure vanilla extract
    • 1 tbsp maca powder (optional)
    • ¼ cup cacao nibs or semi-sweet chocolate chips

    Instructions

    1. Place cashews in the bowl of a food processor fitted with the ‘S’ blade and blend until a powder forms. Add the dates, oat flour, cashew butter, maple syrup, salt, vanilla, and maca, if using, and process until the mixture begins to pull together.
    2. Add the cacao nibs and pulse to incorporate.
    3. Line a plate or cookie sheet with parchment paper. Divide dough into 20 equal balls and place in an even layer on the plate or cookie sheet.
    4. Place in the freezer for 10 minutes to allow dough balls to firm up. Then transfer them to an airtight container and store in the fridge or freezer until ready to enjoy.

    Notes

    Make them nut-free: Use raw sunflower seeds and sunflower seed butter in place of the cashews and cashew butter.
