    Peanut Butter and Honey Energy Balls

    Simple, healthy peanut butter and honey energy balls made with just five ingredients that taste like your favourite peanut butter and honey sandwich! These peanut butter and honey energy balls are made with rolled oats, dates, peanut butter, honey, sea salt, and vanilla. They are perfect for a grab and go snack!

    Calling all peanut butter and honey lovers! I have always been more of PB and honey than a PB and J gal. So, I figured, why not create a new energy ball flavour out of that favourite sandwich combo?

    Ingredients in Peanut Butter Energy Balls

    Oats: I use regular old-fashioned organic rolled oats. Bonus points if they are also sprouted, which makes them easier for you to digest and absorb their nutrients.

    Dates: Medjool dates are the best dates to use in energy balls, as they are soft and sticky- perfect for holding those energy balls together.

    Peanut Butter: Use an all natural peanut butter. The only ingredient should be dry-roasted peanuts. If you don’t want to use peanut butter, sub almond butter or cashew butter instead.

    Honey: Honey is used to provide additional stickiness and sweetness. Maple syrup can also be used if you would like to turn them into peanut butter and maple energy balls.

    Salt: A small amount of salt helps to bring out the flavour.

    Vanilla: Real vanilla extract adds another layer of flavour.

    These energy balls are so easy to make with a food processor for blending all of the ingredients and your hands for rolling the mixture into balls.

    1. Place the rolled oats in a food processor fitted with the ‘S’ blade. Process into a flour. Next, add the remaining ingredients. Process until they are well combined and come together like cookie dough.
    2. Roll into 16 balls and place on a large plate lined with parchment paper.
    3. Place in the freezer for 10 minutes to firm up. Transfer into an airtight container and store in the fridge or freezer.

    storage instructions

    Store these energy balls in an airtight container in the freezer for up to three months. They soften up quite quickly at room temperature. If they are too hard straight out of the freezer, let them soften at room temperature for 5-10 minutes before enjoying.

    Ingredients

    • ⅛ teaspoon sea salt
    • 1 teaspoon vanilla extract
