    These lemony marinated Mediterranean white beans are full of flavour! These white beans are flavoured with lemon, extra-virgin olive oil, balsamic vinegar, capers, sun-dried tomatoes, feta, and herbs.

    Hi again! I am so in love with these marinated Mediterranean white beans! This is one of those “back pocket” recipes that you can turn to week after week when life gets hectic.

    It’s perfect for meal prep and incredibly versatile. A few of the many ways to serve these marinated white beans include:

    Spooned over toast spread with butter or good quality extra-virgin olive oil.

    Tossed with freshly cooked pasta for a quick yet elegant dinner.

    Served as a wrap in a flour tortilla (or a collard “wrap” or lettuce leaves).

    Served in a bowl with steamed greens, lemon tahini sauce, and quinoa or rice.

    The possibilities with this humble little recipe are truly endless. Let me share the simple details with you!

    Marinated Mediterranean White Beans Ingredients

    • Extra-virgin olive oil
    • Onion
    • Garlic
    • Bell pepper
    • Dried oregano, basil, and dill
    • White beans
    • Oil-packed sun-dried tomatoes
    • Capers
    • Lemon
    • Sea salt and pepper
    • Fresh parsley
    • Balsamic Vinegar

    Step By Step Instructions

    Warm the olive oil in a skillet over medium heat. Once it shimmers, add the onion, garlic, and bell pepper. Cook, stirring occasionally, until softened, eight minutes.

    Add the oregano, basil, and dill, followed by the white beans. Remove from the heat. Stir in the sun-dried tomatoes, capers, lemon, sea salt and freshly cracked black pepper (to taste), fresh parsley, and balsamic vinegar. Taste and add additional salt, lemon, and/or balsamic, if desired. For an additional bit of spice, you can add some hot red pepper flakes, if you like.

    And that’s it! This is definitely one of my simpler recipes, but simple is just the way I’m rolling these days! Simple yet so delicious and healthy… my favourite!

    Variations and Modifications

    There are several ways to modify this recipe based on your preference and ingredients you have on hand. For instance, you can swap out the beans for an equal amount of cooked chickpeas or French green lentils. You can also replace the sun-dried tomatoes with Kalamata olives. It’s a very forgiving recipe, so feel free to experiment!

    Storage Instructions

    Store these marinated white beans in an airtight container in the fridge for up to four days.

    Description

    These lemony marinated Mediterranean white beans are full of flavour! These white beans are flavoured with lemon, extra-virgin olive oil, balsamic vinegar, capers, sun-dried tomatoes, feta, and herbs. 


    Ingredients

    Scale
    • 2 tablespoons extra-virgin olive oil
    • 1 medium onion, diced
    • 3 garlic cloves, minced
    • 1 red or orange bell pepper, diced
    • 2 teaspoons dried oregano
    • 1 teaspoon dried basil
    • 1 teaspoon dried dill
    • 3 cups cooked white beans (or 2 14-oz cans, drained and rinsed)
    • ⅓ cup oil-packed sun-dried tomatoes, chopped (drained of excess oil before measuring)
    • 2 tablespoons capers
    • Zest and juice of 1 lemon
    • Sea salt and freshly ground black pepper, to taste
    • 1 cup fresh parsley, finely chopped
    • 2 tablespoons balsamic vinegar
    • 1 cup diced feta cheese
    • Optional: Hot red pepper flakes, to taste

    Instructions

    1. Warm the olive oil in a skillet over medium heat. Once it shimmers, add the onion, garlic, and bell pepper. Cook, stirring occasionally, until softened, eight minutes.

    3. Drizzle with a bit more olive oil before serving, if desired.
