Mediterranean Seven Layer Dip

Description

This Mediterranean seven layer dip is a fresh and healthy twist on traditional seven layer dip. It has layers of hummus, tzatziki, cherry tomatoes, olives, cucumber and herbs, feta, and red onion. Serve this dip with homemade baked pita chips for the perfect appetizer!


Ingredients

For the hummus: 

  • 3 cups cooked chickpeas (or 2 14-oz cans, drained and rinsed)
  • 6 tablespoons tahini
  • 6 tablespoons extra virgin olive oil 
  • Juice of two lemons 
  • 12 teaspoons sea salt or Redmond salt (to your taste)
  • 2 teaspoons cumin
  • 2 large garlic cloves, minced

Layer 2: Tzatziki

  • 1 cup whole milk Greek yogurt
  • 1/2 of an English cucumber, grated, liquid squeezed out
  • 2 tablespoons fresh dill, chopped
  • Zest and juice of 1/2 a lemon
  • Sea salt and pepper, to taste
  • 1 garlic clove, minced

Layer 3:

  • 1/2 of an English cucumber, diced

Layer 4:

  • 1/2 of a small red onion, finely chopped

Layer 5: 

  • One pint of cherry tomatoes, sliced

Layer 6: 

  • 1/2 cup pitted Kalamata olives, sliced

Layer 7: 

  • 1 cup crumbled feta cheese + additional chopped fresh dill

Pita Chips: 

  • 3 pitas, each cut into 8 triangles
  • 4 tablespoons extra-virgin olive oil 
  • 1 garlic clove, minced
  • Sea salt and freshly ground black pepper
  • 1 teaspoon dried oregano

Instructions

  1. Make the hummus: In a food processor fitted with the ‘S’ blade, combine the chickpeas, tahini, olive oil, lemon juice, salt, cumin, and garlic. Process until smooth. Spread over the bottom of an 8×8- or 9×9-inch square dish, or a similar sized round dish. It’s nice to use a glass dish so that everyone can see the layers. 
  2. Next, make the tzatziki. Stir all of the tzatziki ingredients together in a bowl. Spread over the hummus. 
  3. Finally, add the remaining layers in the following order: cucumber, red onion, cherry tomatoes, olives, feta, and a sprinkle of additional dill, if desired.
  4. To make the pita chips: Preheat the oven to 375 F. In a small dish, stir together the oil, garlic, a big pinch of salt and pepper, and oregano. Arrange the pitas in an even layer on a large, rimmed baking sheet. Brush both sides of each pita triangle with the oil mixture. Bake for 12-15 minutes, or until crisp. 
  5. Serve the dip with the pita chips and enjoy!
