This healthy sweet potato skillet blondie with oat flour is dense, gooey, and studded with chocolate chips. The icing on the cake (errr, blondie) is a classic brownie icing. While entirely optional, it really seals the deal. What is not optional? Serving this blondie warm, with a scoop of vanilla ice cream and caramel sauce!

This healthy sweet potato skillet blondie is my Dad’s favourite dessert of late. (Us girls’ favourite dessert of late is my Healthy S’mores Skillet Cookie, but both of them are to die for in different ways!)
The blondie itself is very wholesome and healthy. It’s made with great ingredients like egg, almond butter, coconut sugar, maple syrup, sweet potato, milk vanilla, oat flour, and chocolate. The icing on top is not healthy in conventional terms; it’s made with chocolate, butter, cream, and icing sugar. But you know what? It’s all about balance! This is pretty much the exact recipe for brownie icing that my mom always used to make when we were growing up, and it’s very nostalgic. It has that crackly top that breaks when cut into… totally divine.

INGREDIENTS IN A SWEET POTATO SKILLET BLONDIE
- Egg
- Almond Butter
- Coconut Sugar
- Maple Syrup
- Sweet Potato
- Milk
- Vanilla
- Baking Powder
- Sea Salt
- Oat Flour
- Chocolate Chips
For the classic chocolate icing, here are the ingredients you’ll need:
- Dark Chocolate
- Butter
- Cream
- Icing Sugar
- Vanilla
STEP BY STEP INSTRUCTIONS
Preheat the oven to 350 F and grease a 10-12-inch cast iron skillet with butter.
In a large bowl, whisk together the egg, almond butter, coconut sugar, maple syrup, sweet potato puree, milk, and vanilla. Whisk in the baking powder and sea salt. Stir in the oat flour and the chocolate chips. Scoop into the prepared skillet and smooth out.
Bake for 18-20 minutes, until just set in the middle. Be careful not to over-bake, or you will end up with a dry blondie instead of a gooey blondie!
Let cool completely before spreading the icing over top.
To make the icing, melt together the chocolate and butter over low heat, whisking occasionally. Set aside to cool for ten minutes. Place the icing sugar in a medium bowl. Add the melted chocolate and butter, cream, and vanilla. Beat with an electric mixer until fluffy.
Spread the icing over the blondie, slice, and enjoy with ice cream and caramel sauce, if desired.
