I’m sharing a new overnight oats recipe today, and boy, is it a good one! Healthy chocolate overnight oats topped with a big scoop of peanut butter banana soft serve. Bliss in a bowl!
For me, chocolate is irresistible at any time of day, but in the morning, I prefer to keep things on the healthy side. Thankfully, mixing a bit of cocoa and maple syrup into my overnight oats from time to time is enough to satisfy a craving while still keeping good nutrition in mind.
I’ve said this before, but I’m not a huge overnight oats fan on their own. I think it’s a texture thing. I also don’t like just one flavour in my food, even at breakfast. That’s why I’m obsessed with topping my overnight oatmeal bowls with a big scoop of banana soft serve. It provides a sweet, cold contrast to a somewhat bland bowl of oats. Not to mention a big boost of B vitamins, potassium, and healthy fat thanks to nut butter.
If you’ve never heard of or made banana soft serve before, prepare for an obsession. It’s essentially a healthy version of ice cream that’s made by blending frozen banana and nut butter together in a food processor until creamy. You’ll love it! 🙂
ingredients you’ll need
For the chocolate overnight oats, you’ll need yogurt (any variety works; I used organic whole milk yogurt), milk (again, any kind- dairy or non-dairy), rolled oats, chia seeds, cocoa, maple syrup, vanilla, and salt.
For the peanut butter banana soft serve, you’ll need frozen bananas, peanut butter, and salt.
the method
The night before, mix up the oats: In a bowl, combine the yogurt, milk, oats, chia, cocoa, maple syrup, vanilla, and a tiny pinch of sea salt. Whisk to combine and transfer into an airtight jar or container. Place in the fridge overnight, where the oats will soften and the mixture will thicken up.
In the morning, make the banana soft serve: Roughly chop the bananas and place them in a food processor fitted with the ‘S’ blade along with the peanut butter and a tiny pinch of salt. Process until smooth and creamy, pausing to scrape down the sides of the bowl of the food processor as needed. It takes a couple of minutes for the bananas to turn into a smooth, creamy mixture, but it will happen! Transfer the soft serve into an airtight container and place in the freezer until ready to serve so that it doesn’t melt too much.
Serve: Divide the oats between two bowls or Weck jars (shown in photos). Top with a scoop of soft serve and garnish with berries, chocolate chips, coconut, hemp, nuts or seeds, or anything else you like. You might not need all of the soft serve.

- 1 cup unflavoured + unsweetened yogurt (any kind- dairy or non-dairy)
- 1 cup unflavoured + unsweetened milk (any kind- dairy or non-dairy)
- ⅔ cup large flake rolled oats
- 3 tablespoons chia seeds
- 2 tablespoons cocoa
- 1 tablespoon maple syrup, or more to taste
- ½ teaspoon vanilla extract
- Tiny pinch of sea salt
Peanut Butter Banana Soft Serve
- 3 large ripe frozen bananas
- 2 tablespoons smooth peanut butter (unsweetened + unsalted)
- Tiny pinch of sea salt
Instructions
