Granola is one of my all-time favourite snacks to have on hand. I typically have a jar of homemade granola in the fridge at all times. It is incredibly easy to make, and much more healthy and economical than store-bought varieties. Store-bought granola tends to be made with cheap, highly processed oils, such as soybean and canola, as well as lots of sugar. By making your own, you get to control the quality of the ingredients and the amount and type of sugar… and did I mention just how simple it is to whip up?
This chocolate chunk pecan granola is truly delicious, with buttery pecans, smooth dark chocolate, and chewy dried fruit in every bite. I know that everyone has their own favourite way to enjoy granola; I am currently having a moment with the combination of banana nut butter soft serve topped with this granola for an evening snack. It’s my kind of healthy ice cream sundae situation that I can feel good about eating on a daily basis. It would also be great on any kind of breakfast smoothie bowl, as an afternoon snack with some Greek yogurt, berries, and hemp, or all on its own.

You’ll need rolled oats, pecans, coconut, chia seeds, cinnamon, sea salt, maple syrup, butter, nut butter, coconut sugar, vanilla, dark chocolate, and dried fruit of your choice.
the method
Preheat the oven to 325 F and line a large rimmed baking sheet with parchment paper. In a large bowl, mix together the oats, pecans, coconut, chia, cinnamon, and salt.
In a small saucepan, combine the maple syrup and butter over low heat. Whisk in the nut butter, coconut sugar, and vanilla. Pour over the dry ingredients and stir to coat. Transfer onto the prepared baking sheet and spread out in an even layer.
Bake for 30-35 minutes, stirring after 15 minutes, until golden brown and fragrant. Let cool before mixing in the dark chocolate and dried fruit. Store in an airtight jar at room temperature for up to one week, or in the fridge for one month.

- 3 cups large flake rolled oats
- 1 ¼ cups pecan halves
- 1 ¼ cups unsweetened shredded coconut
- ¼ cup chia seeds
- 2 teaspoons cinnamon
- ¼ teaspoon sea salt
- ⅓ cup maple syrup
- 3 tablespoons organic salted butter or virgin coconut oil
- ¼ cup nut or seed butter
- 3 tablespoons coconut sugar
- 1 teaspoon vanilla extract
- 100 grams chopped dark chocolate (I used 70% cacao)
- ½ cup dried fruit, chopped if large (I used raisins and cranberries, but figs would also be tasty)
