Good morning, and happy Saturday! I hope you had a lovely week. It’s hard to believe that we are already halfway through the month! Hopefully your weekend is off to a nice, relaxing start. I don’t have much on the agenda aside from school work, workouts (currently doing the P90X program again and loving it), and hopefully lots of time outdoors. There’s finally some fresh snow, which makes everything so beautiful and perfect for winter activities.

If you’re feeling like you need a boost, I’ve got just the drink to pick you up: An almond milk and honey latte, inspired by the Almond Milk Honey Flat White from Starbucks! Unfortunately for us, that drink doesn’t have the greatest ingredients. I looked them up, and it turns out that it contains what they call a “honey blend,” which is made up of the following: Honey, Water, Natural Flavors, Potassium Sorbate, Xanthan Gum, Citric Acid. I don’t know about you, but I don’t see why one would have to ruin the most natural sweetener on earth with those additives!

a better almond milk honey latte

So, I decided to create my own almond milk and honey latte using a handful of healthy ingredients: Almond milk, strong brewed coffee or espresso, almond butter, local honey, cinnamon, and nutmeg.

how to make this latte

Making this latte at home could not be easier!

  1. Brew your coffee or espresso.
  2. Warm together almond milk, almond butter, honey, cinnamon, and nutmeg in a small saucepan over medium heat.
  3. Once hot, combine the coffee and almond milk and honey mixture together in an upright blender.
  4. Blend, starting on low speed and gradually increasing to high, for 15 seconds.
  5. A layer of froth will form on top as it settles. Pour into a mug and enjoy!

And stay tuned for Monday’s recipe: Vegan Mac and Cheese with Creamy White Bean Sauce and Broccoli! (It’s really more exciting than it sounds, haha.)

Enjoy!!

This almond milk honey latte features double the almond goodness, thanks to creamy almond butter blended in, plus REAL honey and strong coffee or espresso and a dash of cinnamon and nutmeg for good measure.

Scale

  • 1 cup unsweetened almond milk
  • 1 tablespoon almond butter

  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg

Instructions

  1. Brew your coffee or espresso.
  2. Warm together almond milk, almond butter, honey, cinnamon, and nutmeg in a small saucepan over medium heat.
  3. Once this mixture is hot, combine the coffee and almond milk and honey mixture together in an upright blender.
  4. Blend, starting on low speed and gradually increasing to high, for 15 seconds.
  5. A layer of froth will form on top as it settles. Pour into a mug and enjoy!

Notes

To make this drink vegan, feel free to use maple syrup in place of the honey! I think a maple almond nutmeg latte sounds quite delicious, too. 🙂

This is far better than anything I’ve drank at a high end coffee shop. Loved it!
