Here are all the things you should eat this week! We have a week’s worth of healthy dinners, plus a lunch and breakfast recipe to enjoy. Everything is bright and colourful as we get closer and closer to the beginning of spring.
On Monday, make my favourite Moroccan Chicken Pitas. They feature Moroccan chicken, sweet potatoes, olives, and veggies with a creamy feta honey garlic sauce.
Tuesday’s supper is Creamy Goat Cheese Pasta with leeks, artichokes, peas, and lemon: It will get you right in the mood for spring.
This satisfying Mixed Green Salad with Smoky Roasted Chickpeas can be the star of the show or a side dish on Wednesday. It would be great next to any animal or plant-based protein and a cooked grain or pitas/naan.
For Thursday, make these Masala Chicken Meatball Bowls. They comprise a vibrant beet cabbage slaw, turmeric rice, and mango salsa, along with the masala chicken meatballs. Drizzle with a cooling raita and enjoy a Mango Lassi for dessert!
For a fun Friday meal, make these Spicy Sausage Muhammara Quesadillas. They’re topped off with a pomegranate avocado salsa. So yummy!
For lunches, try these Smashed Chickpea Avocado Dill Pickle Sandwiches. They’ve been really popular recently!
