I’m excited to introduce a new weekly feature here on Up Beet Kitchen: Weekly dinner menu plans! Every Sunday, you can find seven balanced, plant-based dinner ideas, plus some treats and snacks to round it all out. I hope that this feature helps to give you some inspiration in the meal planning department. π
monday: Soup + Avocado Toast
Cauliflower, Turmeric, and Potato Soup, topped with roasted chickpeas and served with avocado toast.
Tuesday (Taco Tuesday!)
Butternut Squash + Crispy Chickpea Tacos with Zippy Parsley Sunflower Seed Sauce
Wednesday: Pasta Night
Lentil Walnut Bolognese + Avocado Kale Caesar Salad
Thursday: Loaded Potatoes
Black Bean and Quinoa Stuffed Sweet Potatoes (Serve with a simple green salad with vinaigrette, if desired.)
Friday: Pizza or Veggie Burger Night
Roasted Broccoli and Artichoke Pizza (make it vegan by swapping out the feta for vegan cheese) OR Moroccan Chickpea Burgers
Saturday: Wraps
Buffalo Chickpea Wraps (I love pairing them with this Spinach and Potato Soup)
Sunday: Pasta
White Bean Mac and Cheese with Broccoli and Sun-Dried Tomatoes

Banana Oatmeal Almond Breakfast/Snack Bars With Chocolate Sweet Potato Icing
