This harvest-inspired tahini kale Caesar salad has roasted butternut squash, cranberries, rustic croutons, and more! It’s the perfect vegan side dish for holiday meals.

We LOVE my avocado kale caesar salad recipe- we find ourselves making it at least once a week to serve alongside Mediterranean dishes- but I’ve wanted to put a fresh spin on a favourite for awhile. A few weeks ago, I saw that Stir It Up PEI, a vegan restaurant in Charlottetown, Prince Edward Island, had a harvest kale caesar salad special that looked so good, I wanted to jump right through the screen and grab a bowl for myself. That not being possible, I set to work creating something similar at home! 🙂

This kale caesar salad has a tahini dressing that’s amped up with nutritional yeast, garlic, lemon, and capers. This dressing is massaged into kale, which is tossed with roasted butternut squash, cabbage, almonds, rosemary croutons, dried cranberries, and celery. It really is a feast for the senses! Because it has quite a few components, I am going to call this a “weekend salad” rather than a weeknight salad. It takes some time to prepare, but the delicious result will be worth it! I think that it would be the perfect salad to serve alongside a vegan lasagna with tofu ricotta… which I hope to share a recipe for before Christmas, if I can get my act together!

    INGREDIENTS YOU’LL NEED

    • FOR THE SALAD: Butternut squash, olive oil, salt, pepper, smoked paprika, almonds, kale, celery, dried cranberries, red cabbage, sourdough bread, dried rosemary, and dried thyme.
    • FOR THE DRESSING: Tahini, lemon juice and zest, nutritional yeast, dijon mustard, capers, Worcestershire sauce, sea salt, pepper, garlic, and water.

    STEP BY STEP INSTRUCTIONS

    1. Roast the butternut squash: Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper. Place the squash in a bowl and drizzle with the olive oil. Next, sprinkle with salt, pepper, smoked paprika, and garlic powder. Toss to coat and transfer onto the baking sheet in an even layer. Roast for 25-30 minutes, or until the squash is fork tender and nicely browned on the outside. Remove from the oven and let cool on the pan.
    2. Make the croutons: Reduce the oven temperature to 350 degrees Fahrenheit. Place the cubed sourdough bread in a bowl and drizzle with olive oil. Sprinkle with salt, pepper, rosemary, and thyme. Toss to coat. Transfer onto a baking sheet and arrange in an even layer. Bake for 12 minutes, flipping halfway through, or until browned and crispy to your liking.
    3. Roast the almonds: Reduce the oven temperature to 325 degrees Fahrenheit. Place the almonds in a small baking dish and roast for 10 minutes. Remove from the oven and chop once cool.
    4. Make the dressing: Place the tahini, lemon juice and zest, nutritional yeast, dijon, capers, Worcestershire sauce, salt, pepper, garlic, and water in a blender. Blend until smooth. Transfer to a jar until you dress the salad.
    5. Make the salad: Chop the kale and place it in a large bowl. Pour the tahini dressing over top and massage the dressing into the kale. Take your time with this to ensure that every leaf gets a nice coating of dressing and becomes tender.
    6. Next, add the chopped cabbage, celery, cranberries, squash, almonds, and croutons. Toss to combine and serve!
    7. You can store leftover salad in an airtight container in the fridge for several days. Because kale is such a sturdy green, it takes awhile for it to get soggy! This salad could double as an amazing lunch, especially if you top it with crispy baked tofu or chickpeas!

    A FEW FINAL THOUGHTS

    • If you’re not a tahini fan, feel free to use the dressing from the avocado kale caesar salad recipe, instead!
    • If you need a gluten-free salad, be sure to use gluten-free bread for the croutons.
    • Feel free to make a half batch if you’re not feeding a crowd. This salad makes six generous servings.

This is the best caesar salad I have made. The creaminess of the tahini, and squash/croutons make me feel like I am not eating a healthy kale salad!
