    What To Eat This Week (September 19th-25th, 2022)

    Welcome to this week’s menu plan! From vegan loaded sweet potatoes and a cozy one skillet chicken and rice dinner to pumpkin banana muffins and a Starbucks-inspired almond honey latte, this is your place to find cozy and healthy inspiration for your meals, snacks, and desserts this week.

    What a whirlwind couple of weeks! After spending the past week in Ithaca, New York hiking, chasing waterfalls, and enjoying all the food and drink the splendid Finger Lakes region has to offer, I am happy to be back on track with regular posts coming your way this week. We got home on Friday evening. Saturday flew by as I did a 20 mile run, then did some cooking and baking in the afternoon. And then today I was back to work at my day job.

    The week leading up to my trip to New York also ended up being a bit of a whirlwind, as a friend from BC stopped over for a visit for a few days. I was also hired on to bake cupcakes for a retirement party during that week. Prepare for some fun new recipes in the coming days, though! I have a surplus of content to share before I get into creating and sharing some truly autumnal recipes.

    I’ll share more about my Ithaca trip soon- it deserves a separate post! But I will say that I am entirely smitten with upstate New York and hope to go back to do some more exploring very soon!
