Apple Pie Blended Baked Oats

Description

Hopping on the baked oats train with these apple pie blended baked oats. A handful of healthy ingredients including egg, almond milk, applesauce, peanut butter, maple syrup, and spices are thrown into a blender, blended up until smooth, poured into ramekins, and baked. The perfect healthy fall breakfast or snack recipe, these blended baked oats taste just like cake!


Ingredients

  • 1/4 cup non-dairy milk
  • 1 large egg
  • 1/4 cup unsweetened applesauce
  • 1/2 cup rolled oats
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon ginger
  • 1/8 teaspoon cardamom
  • 1/8 teaspoon nutmeg
  • Pinch of cloves
  • 1/4 teaspoon baking powder
  • Pinch of sea salt
  • 1/2 teaspoon vanilla extract
  • 1/21 tablespoon maple syrup or 1 pitted Medjool date (sweeten to your taste)
  • 1 tablespoon nut butter
  • 1/2 an apple, finely chopped
  • 1 tablespoon raisins, plus more for topping

Instructions

Preheat the oven to 350 F and lightly grease 2 8-oz ramekins or 2 8-oz round glass baking dishes with butter or coconut oil.

Place all ingredients except the chopped apple and raisins in a blender and blend until smooth. (For the lightest and fluffiest baked oats, you’ll want to blend it until it’s extremely smooth.) Stir in the chopped apple and raisins.

Divide between the two ramekins and sprinkle the tops with a few more raisins, if desired.

Bake for 15-20 minutes (I baked mine for 20 minutes), or until a toothpick inserted into the centre of one of the cakes comes out clean.

Let sit until cool enough to handle and then enjoy warm, topped with more nut butter, yogurt, apple, walnuts, etc.

Notes
