What To Make For Dinner This Week (March 8-14, 2021)

Here are some vegan dinner ideas for the week ahead! We’ve got lots of comfort food for these last few weeks of winter- everything from loaded baked potatoes to tempeh breakfast sandwiches and a cozy casserole. Hope you enjoy!

monday

Loaded Hungarian Baked Potatoes with Wild Rice, Chickpeas, and Mushrooms

Tuesday

Lentil Mushroom Pasta Bake

Wednesday

Roasted Root Veggie + Chickpea Bowls with Nutritional Yeast Dressing

Thursday

Tempeh Breakfast Sandwiches with Chipotle Aioli

Friday

Caribbean Kidney Bean Quesadillas with Mango Aioli (They can be made vegan by using your favourite non-dairy cheese!)

Saturday

Lentil Walnut Meatballs 
(Instead of making the full bowl recipe, serve the meatballs over pasta and marinara sauce, and serve with a simple spinach or arugula salad on the side. That’s how my mom served them last week, and it was SO good. She knows how to spoil her girl!)

Sunday

Chickpea Brown Rice Spinach Artichoke Casserole

+ a couple of snacks and desserts to enjoy this week

Sweet Potato Brownies
These brownies are wholesome and fudgey. They’re not too sweet, either. They taste great warmed up with a big glass of milk or a scoop of vanilla ice cream. I’m going to develop a blondie variation this week, too!

Oil-Free Oatmeal Raisin Cookies
(These are my dad’s favourite cookies; he makes them for dessert all of the time. I am of the opinion that they are a healthy snack cookie more than a dessert cookie, however! πŸ˜‰ )

Coming up this week, a Mediterranean chickpea “meatloaf,” Caribbean bean burgers, and carrot cake oatmeal breakfast bars… and possibly a smoothie recipe on Saturday. I might get around to sharing a “What I Ate Wednesday” as well, now that I have a brand new phone with a much better camera. πŸ™‚ Lots of yummy (and slightly more “springy”) food to ease our way into a new season.

    Yum, everything looks so good! I especially want to try that lentil mushroom pasta bake. I’m always up for pasta night!
