It’s time for a fresh installment of What I Ate Wednesday! Can you believe it’s been several months since I shared my last WIAW? Me neither! Making a goal right now of not allowing another five months to pass before I share another one. Hold me to it?
Here’s my day of vegan meals and snacks from the weekend. I’ve been leaning more into intuitive eating/eating for enjoyment in recent years while still keeping an eye on ensuring that I’m getting a good balance of nutrients throughout the day, and thought I’d share what a day of non-diet culture-influenced vegan eating looks like for me.
Just sharing to inspire you to simply enjoy good food! 🙂
Breakfast
Peanut butter and banana on sprouted grain bread and my vegan “Bulletproof” mocha. I also had an orange and a glass of water when I first got up. Sorry I didn’t realize how blurry that photo was until I uploaded it. Also took my three daily supplements, B Complex, flax oil for omega 3, and Vitamin D3.
Lunch
Leftover buffalo cauliflower calzone from the “But I Could Never Go Vegan!” cookbook by Kristy Turner. Plus some leftover salad with this random mint, lime, hemp, and avocado dressing that I had whipped up the night before with what was in the fridge.
Then I had an apple and one of my chocolate chip, pecan, and cranberry cookies. (But forgot to take a picture!)

My snack obsession this week has been old fashioned stovetop popcorn sprinkled with my sunflower parmesan and hot sauce. That with sparkling water and a twist of lime makes a mighty fine pre-dinner snack!

Vegan Nachos Supreme!!! I’ll share the recipe as soon as I get around to it. I topped tortilla chips with spicy barbecue tofu, black bean and corn salsa, tahini sweet potato queso, cashew sour cream, and guacamole. I served steamed broccoli on the side for a little green goodness. And of course I had this beer that I am obsessed with.

Peanut butter s’mores cookies based off of this recipe and Numi organic Moroccan mint tea.
Which recipes and foods have you been enjoying lately? I know it’s such a weird time we’re in right now, with the pandemic preventing us from going to the grocery store often, if at all. It’s definitely forcing me to be more creative with what I already have on hand, though! Anyways, I’d love it if you commented with something you’ve really been enjoying lately.
