    Blueberry Chai Protein Smoothie Bowl

    Bluberry Chai Protein Smoothie Bowls topped with grain-free granola, apple, and bee pollen

    Meet your new favourite late summer breakfast. This Blueberry Chai Protein Smoothie Bowl is cool and refreshing, but it also features warming spices like cinnamon, ginger, and cardamom. It’s perfect for cooler summer mornings.

    When I visited Vancouver last year, I had a long list of restaurants, bakeries, and cafes that I wanted to hit up. Vancouver is a foodie mecca, and I didn’t come close to crossing even a quarter of the places off of the list, but my travel buddies and I did manage to visit Buddha-Full Provisions, an organic vegan cafe, on multiple occasions. You know that feeling when you strike gold with a restaurant, and you see no reason to eat anywhere else?

    That’s how it was at Buddha-Full. We enjoyed many a fine meal over our 3 days in North Vancouver. In fact, one of the first recipes I ever created for the blog–my Mystic Bowls–was inspired by a dish there.

    This Blueberry Chai Protein Smoothie Bowl is inspired by Buddha-Full’s Blue Dharma smoothie, which I had as a smoothie bowl topped with granola, fruit, and pine pollen before we hiked up Grouse Mountain. Best day ever!

    To make my version, you’ll need a frozen banana, avocado, frozen bluberries, non-dairy milk, plant protein powder, chia or flax, plus chai spices: cinnamon, ginger, cardamom, and cloves.

    As far as toppings go, let your imagination run wild! I went for thinly sliced apple, grain-free granola (recipe coming SOON!), and this bee pollen. A drizzle of almond butter would also be tasty!

    There’s so much to love about this smoothie bowl. It’s:

    -Packed with plant-based protein (20+ grams!)
    -Bursting with antioxidants
    -Like eating a chai latte-blueberry smoothie hybrid

    Ingredients

    Scale

    INGREDIENTS

    • ¾ cup unsweetened non-dairy milk (almond, hemp, cashew, oat)
    • 1 large frozen banana, chopped 
    • ½ cup frozen blueberries
    • 2 tbsp ripe avocado
    • 1 scoop vanilla flavoured organic plant protein of choice (I like a blend of sprouted pea and brown rice)
    • ¼ tsp cinnamon
    • ⅛ tsp ginger
    • ⅛ tsp cardamom
    • Pinch of cloves
    • 1 tbsp chia seeds or ground flax seeds

    TOPPINGS:

    • Granola
    • Thinly sliced apple
    • Bee pollen
    • Nut butter
    • Pumpkin seeds

    Instructions

    1. Place all ingredients in a blender and blend until smooth.
    2. Pour into a bowl and top with granola, apple, bee pollen, nut butter, pumpkin seeds, or any other desired toppings.

    Notes

    If you’re short on time, increase the non-dairy milk to 1 cup and enjoy as a drinkable smoothie.

      This was delicious! I don’t usually like smoothies with protein powder but this one has a really nice texture. The spices were perfect as well.
