All the things to cook, bake, and eat this week, including banana Greek yogurt overnight oats and zucchini oatmeal bars, superb salads, burgers, hummus, and tacos!
Trying to embrace all the summer abundance for the rest of August! This week’s menu incorporates plenty of corn, berries, herbs, greens, and cauliflower.
Monday: Get the week off to a delicious start with these Greek Yogurt Banana Overnight Oats. I’ve been having these for breakfast on most weekdays this summer!
Tuesday: Make this Roasted Corn and Jalapeño Hummus for a snack on Tuesday. This is also a delightful sandwich spread with cheddar cheese, crispy bacon, tomato, and greens.
Wednesday: Mexican-Inspired Turkey Burgers would be a fabulous mid-week supper. Serve with sweet potato oven fries and a kale salad!
Thursday: Chocolate Chip Zucchini Oatmeal Bars to put your bumper crop of zucchini to good use! They’re great for breakfast or snacks.
Friday: This Chipotle Tofu, Peach, and Corn Salad with Cilantro Pepita Dressing has to be one of my favourite summer salads. It’s a fun Friday salad. I love to serve this with some homemade cornbread muffins and a nice IPA, and enjoy it all al fresco.
Saturday: Make some Mole Cauliflower Tacos with Mango Salsa for a fun Saturday supper. They’re big on flavour!
Sunday: And finally, whip up a batch of these Cashew Cookie Dough Energy Bars on Sunday for the week ahead.
