    Welcome to this week’s edition of “What To Cook This Week!” In this post, you will find seven wholesome and nourishing recipes to try in the coming week!

    Hello again and happy Sunday! Hope you’ve had a great weekend so far and that your Sunday is filled with relaxation and good food! Here are some ideas for meals, snacks, and desserts to make this week. I hope that you enjoy all of these recipes! 

    Monday: Pumpkin Butter Chickpeas (Vegan)

    Tuesday: Brown Butter Apple Maple Oat Flour Muffins

    Tuesday: Mole Cauliflower Tacos
    Wednesday: Brussels Sprout, Squash, and Halloumi Salad with Orange Tahini Dressing
    Thursday: Pesto Chicken Tortellini Soup
    Friday: Sweet Potato Chocolate Chip Sheet Cake

    It should be a tasty week! I’m moving this coming week and running my first race since before the pandemic next Saturday; should be a fun and somewhat hectic week! Hope you all have a good one, see you tomorrow with my pumpkin apple butter bread!
