    Happy Sunday! Here is this week’s meal planning inspiration featuring recipes old and new from Up Beet Kitchen. Hope you find it helpful and enjoyable… and that it makes your weekly menu planning that much easier! 

    What are you all up to today? I’m heading to the farmer’s market with my mom in the morning, then hopefully meeting up with a good friend I haven’t seen in awhile this afternoon. Should be a chill sort of Sunday- the best! Whatever you get up to, I hope your day is great, relaxing, and most importantly, filled with delicious aromas and flavours coming from your kitchen. 

    Okay now, on to the recipes!

    Tuesday: Beet Lentil Pasta with Feta Walnut Sauce

    -Vanilla Chai Sweet Potato Oat Flour Muffins
    -Chipotle Pumpkin Beer Braised Chickpea + Cheddar Biscuit Pot Pie
    -Chocolate Super Seed Energy Balls
    -Moroccan Butternut Squash and Cauliflower Soup with Goat Cheese
    -Vegan Tofu + Rainbow Veggie Wraps with Caesar Dressing  and Hummus

    It should be a delicious week! I can hardly wait.
