    Healthy Meal Planning: What to Make For Dinner This Week

    Wondering what to make for dinner this week? Hopefully these five healthy meals will give you the inspiration you need to nourish and energize your body, mind, and soul all week long!

    Hey everyone, welcome back to a series that I started in the winter and then abruptly stopped because I was preoccupied with school! One thing that I think most of us struggle with at one point or another is a lack of inspiration when it comes to planning dinners for the week. I have come up with a system that works for me at this stage, and I wanted to share it with you. Basically, every weekday has a different theme: 

    • Monday is for a meal-sized salad. 
    • Tuesday is Taco Tuesday. (Or burritos/quesadillas- whatever you’re in the mood for!)
    • Wednesday is for burgers or pasta. 
    • Thursday is ethnic night; each week, I’ll choose a different country’s cuisine to cook from. 
    • Friday is pizza night. I don’t have a ton of pizza recipes on the blog just yet, but I’m working on adding to the collection.

    Santa Fe Chicken Salad or Egg, Fried Halloumi, and Berry Baby Kale Salad. Serve with a side of pita and hummus to make it extra satisfying!

    taco/burrito/quesadilla tuesday

    Lentil Broccoli Burritos with Tofu Ricotta are flavourful and satisfying. Cheesy, creamy tofu ricotta is combined with lentil, broccoli, sun-dried tomatoes, and olives in tortillas, which are then baked to perfection.

    Wednesday: burgers!

    Try these Mexican Salmon Burgers or my Moroccan Chickpea Burgers– a fan favourite! Both would be great with this Roasted Beet Mixed Green Salad with Pecans and Feta.

    thursday: ethnic night

    How about Italian/Greek this week? I love this Creamy Orzo with Tofu, Sun-Dried Tomatoes, and Spinach. It’s all made in one skillet, and it’s vegan to boot!

    friday: pizza night!

    I’ve made a few really good pizzas lately thanks to this No Knead Pizza Dough; I’ll be starting to share more pizza recipes as the month goes on. Until then, this BBQ Chickpea Pizza on Sweet Potato Crusts is always a hit.

    Oh, and as for new recipes this week, here is what you can expect: Beet Pesto, Egg, and Tempeh Bacon Sandwiches on Monday, Loaded Cauliflower Shawarma Fries on Tuesday; Masala Chicken Meatball Bowls on Thursday; Vegan Lemon Blueberry Cheesecake Popsicles on Friday; and Fudge Cookie Ice Cream Cups with Caramel Sauce on Saturday. It should be a fun week of cooking!
