Description

These healthy chocolate hemp pumpkin seed energy balls are just the snack you need to boost your energy and deliver a dose of minerals, protein, and satiating fibre and healthy fats.


Ingredients

Scale
  • 1/2 cup pepitas (shelled pumpkin seeds)
  • 1/2 cup hemp hearts (shelled hemp seeds)
  • 2 tablespoons chia seeds
  • 1/4 cup cocoa
  • 1 heaping cup pitted Medjool dates (measured after pitting)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 2 tablespoons sunflower seed butter
  • 2 tablespoons maple syrup

Instructions

  1. In a food processor fitted with the ‘S’ blade, process the pumpkin seeds and hemp into a meal. Add the chia, cocoa, dates, vanilla, salt, sunflower seed butter, and maple syrup. Process until the mixture forms a ball. If it isn’t coming together, add a tablespoon or two of water.
  2. Form into 18 balls and place in a parchment paper-lined container. Store in the fridge or freezer.
