For the Chicken Pesto Bowls:
- 1 batch Seared Then Baked Chicken Breasts
- 1 batch Greek Yogurt Pesto Sauce
- Cooked quinoa or rice
- Summer Corn, Cucumber, and Tomato Salad (recipe follows)
Summer Corn, Cucumber, and Tomato Salad
- 1 pint cherry tomatoes, halved lengthwise
- 2 Persian cucumbers, diced
- 1 1/2 cups corn, sliced off the cob or thawed from frozen
- 1/2 cup parsley or cilantro, finely chopped
- 1/4 cup finely chopped red onion
- 1 1/2 tablespoons extra-virgin olive oil
- 1 1/2 tablespoons freshly squeezed lime or lemon juice
- 1/4 teaspoon each sea salt and freshly ground black pepper
Instructions
- Prepare the chicken according to the instructions in this recipe.
- Prepare the pesto sauce according to the instructions in this recipe.
- Make the summer salad: Combine the cherry tomato, cucumber, corn, herbs, and red onion in a bowl. Whisk together the olive oil, lime or lemon juice, salt, and pepper in a small bowl. Pour over the salad and toss to combine.
- Serve: Add cooked quinoa or rice and summer salad to bowls. Top with sliced chicken breast and pesto sauce.
Notes
Storage Tips: All of the components of these bowls (rice or quinoa, chicken, salad, and pesto sauce) can be stored in an airtight container in the refrigerator for three days.
Meal Prep: Portion out rice and chicken into individual glass containers, along with individual containers of salad and pesto sauce. Reheat the chicken and rice, then top with the salad and pesto sauce.
