Description
This Mediterranean Chopped Salad with lemon pesto dressing is healthy, colourful, and bursting with flavour. It’s the perfect side dish to pair with any main.
Ingredients
- 1 head of romaine lettuce, finely chopped (about 9 cups)
- 1/2 cup finely chopped red onion
- 1 cup pitted Castelvetrano olives, sliced in half
- 2 cups cherry tomatoes, sliced in half lengthwise
- 1 yellow or orange bell pepper, finely chopped
- 2 Persian cucumbers, sliced in half lengthwise and chopped
- 6 ounces mozzarella cheese, diced
- 1 14–ounce can chickpeas, drained and rinsed
- 1 batch Pesto Salad Dressing
Instructions
- If you haven’t made the dressing yet, prepare it first, since the rest of the salad comes together quickly.
- Add the finely chopped/shredded lettuce to a large bowl. Top with the remaining salad ingredients.
- Drizzle with about half of the dressing and toss to combine.
- Serve and add additional dressing as desired.
Notes
Storage: If you’d like to make this salad ahead of time, I recommend keeping the lettuce, toppings, and dressing separate until right before serving. The salad will keep for up to three days when everything is stored separately.
Dressing: I love the homemade pesto salad dressing, but if you’re short on time, feel free to use your favourite good quality store-bought salad dressing. I like Primal Kitchen.
